Ganjang Gejang(간장게장, soy crab) is a beloved dish among Koreans, to the point where it's even called a "rice thief." The taste of Gejang starts with the quality of the crab. Jjebosikdang's soy crab is made with female crabs caught in the waters near Gunsan in May when they are fully packed with meat and roe.

The crabs caught in the waters near Gunsan have a distinct difference in taste and are highly nutritious, making them recognized as the best in Korea. Each crab used weighs around 230-250g, with a lid size of approximately 17-19cm, and is filled with rich meat and roe. The crabs are marinated in a traditional sauce made with ingredients such as chili seeds, ginger, and dried angelica roots, then aged for 72 hours. They are rapidly frozen at the peak of their deliciousness and delivered to customers as is, preserving the original taste.
