Our process begins with boiling Korean-grown soybeans in iron cauldrons to create meju (fermented soybean blocks). These meju blocks are then carefully fermented in a hwangtobang (황토방), a traditional Korean clay room, where the natural environment helps develop their rich, deep flavor. This traditional method, combined with meticulous care, ensures the perfect balance of umami for use in stews, soups, and side dishes.

된장의 맛이 깊고 구수해요. 미국에서 오래 살면서 조미료 맛나는 된장만 쓰다가 캐빈 된잔 맛보니까 다른 된장 안 먹게돼요. 한극에 있을때는 된장이 짰는데, 이 토종된장은 안짜요.

This dwen-jang is by far the best I've ever tasted.
